After thawing the veal patties, preheat 1 tablespoon of oil per patty over medium heat. Brown the first side for several minutes and then turn, browning the other side for approximately 2.5 minutes. While the second side is browning, lay a thin slice of mozzarella cheese on top to melt. These patties can also be cooked in the oven. Simply preheat to 375 degrees, line a raised-edge baking sheet with foil, and spray lightly with cooking oil. Bake the patties on this sheet uncovered for 25 to 30 minutes. Note that the baked patties will not be as golden brown as when pan sauteed.
