To prepare, thaw the turkey completely in the refrigerator for 3 to 4 days. Alternatively, place in a sink full of cold water for 5 to 7 hours, changing the water approximately every 30 minutes. Preheat the oven to 350 degrees and remove the bird from the vacuum-sealed bag. Place the turkey in the cooking bag provided, taking care to secure it with the twist tie. Place the bag in turn in a deep roasting pan after puncturing with a fork. For extra browning or crispness, slit the top of the bag for the last 20 to 30 minutes of roasting. Cooking will take between 2 hours and 45 minutes and 3 hours. A stuffed bird will require an additional 20 to 30 minutes of cooking time.
Make a simple gravy in a small saucepan over low heat. Add 3 tablespoons of butter, 3 tablespoons of all-purpose flour, 2 cups of the turkey drippings that have been de-fatted, and 1 cup of water. This will make approximately 1 quart.
